Birdie’s is named after our oldest daughter, who grew up right alongside us as we tested (and re-tested) every slice to make our pizza the best it could be.
We’re Justin and Christine—two dough birds with a serious love for pizza. We met at The Culinary Institute of America nearly 20 years ago and have been chasing flavor ever since. Justin brings a background in fine dining and Christine in bread and pastry (she’s Jersey-grown, so pizza runs deep). Together, we’re blending those passions to create something special here in Asheville.
This place is more than just a pizzeria—it’s our family’s love letter to great food, good people, and really good pizza.
